Strawberries, Penderyn Legend Whisky, Alpro Strawberry Yoghurt

Method:

Measure out 350g strawberries per 700ml Penderyn Legend whisky. Chop strawberries into small cubes and combine with whisky in a jug. Weigh out 300g Alpro Strawberry Yogurt, add to a pan and heat gently until it reaches 50 degrees. Pour yogurt into the whisky and strawberry mixture and stir briefly to combine. Refrigerate for 12 hours so the mixture splits. Spin in centrifuge at 4000rpm for 15 minutes (or alternatively strain through a muslin cloth).

Strawberries, Pectolase, Sugar

Method:

Place strawberries and water in equal measure into a blender. Add 3% of total weight in pectolase powder and blend. Leave for 30-45 minutes to allow the pectolase to work. Spin in a centrifuge at 4000rpm for 10 minutes (or alternatively strain through muslin cloth) to obtain a clear strawberry juice.  Add sugar at ratio of 2:3 sugar:juice and stir until dissolved. Bottle.

Strawberry Syrup (from above), Malic Acid, Agar Agar Powder

Method:

Take 500g strawberry syrup (from above recipe), add 5g malic acid and stir until dissolved. Pour into a pan and add 10g agar agar powder and whisk. Place on a hob on medium heat, stirring very regularly so the agar doesn’t settle. Add 100g sugar, stir and bring to the boil, then pour into a deep-rimmed baking tray until liquid is approx 5mm high in the tray. Pop any bubbles on the surface using a spoon, then leave at room temperature for 30-45 minutes to set. Once firm, cut to the desired shape with a cookie cutter.
