Butter, Raspberries, Boatyard Vodka

Method:

Melt butter gently on hob. Once butter is liquified, blend using a stick blender with fresh raspberries at ratio of 5:1 butter:raspberries. Combine raspberry butter and Boatyard Vodka at ratio of 1:10 butter:vodka, and place in freezer for 24 hours. Pass through a sieve, and then a coffee filter to remove all solids. Bottle.

Vermouth, Raspberries

Method:

Weigh out 3 parts vermouth and 1 part fresh raspberries. Add to isi whipper and charge with 2 canisters of nitrous oxide. Leave to infuse for 2 hours, discharge gas, and pass through a fine sieve.

Raspberries, Salt, Water, Lactic Acid, Citric Acid

Method:

Lightly press raspberries with 1% salt by weight. Add to a fermentation jar (or alternatively seal in a vacuum bag – be sure to check on it regularly to prevent it exploding). Leave to stand for 72 hours in a roughly 15-20 degree place. Pass through a sieve, and add 50% of the weight in water. Add sugar at 1:1 ratio, stir until combined. Add 1% lactic acid and 2% citric acid of total weight and stir until dissolved. Bottle.

Butter, Water, Gum Arabic, Xanthan Gum, Sugar

Method:

Melt 120g butter on a hob and set aside. Add 200g water, 2.7g gum arabic powder and 0.3g xanthan gum to a separate pan and bring to boil, stirring frequently until mixture is homogenous. Add the melted butter and 150g sugar, and stir until dissolved. Bottle.

Method:


  1. Add all ingredients to boston tin and shake.
  2. Fine strain into iced rocks glass.
