Recipe

Cocktail Spec:


100ml of milk punch*
*1 batch of punch:
200ml Bacardi Carribean Spiced
200ml Bacardi Cuatro
250ml Hive Mind Mead
50ml Giffard Creme de Peche
200ml Acid-adjusted peach juice
300ml white peach blossom tea
150g sugar
200g activia peach yogurt

Garnish/Serve:

Peach-scented Dry Ice

Malic Acid, Lactic Acid, Granini Peach Juice

Method:

Add 2% malic acid and 1% lactic acid to Granini peach juice. Stir until dissolved. 

White Peach Blossom Tea, Water

Method:

Infuse 1g per 100ml tea in cold water. Leave to infuse at room temperature for 45 minutes. Strain.

Method:

Add all ingredients except yoghurt to a jug and mix. Add yoghurt to a pan and heat gently on the stove until it reaches 50 degrees. Pour into the bottom of an empty jug, and pour the batch over the top. Refrigerate for 12 hours until the mixture splits. Spin in centrifuge at 4000rpm for 15 minutes to clarify (or alternatively strain through a muslin cloth). Bottle.

Method:


  1. Pour 100ml of punch straight from fridge into iced rocks glass.
  2. Add dry ice to base, pour peach scented water** over until steaming, attach lid and place drink on base.
