5ml William Fox Rhubarb Syrup
5ml sugar syrup (2:3)
70ml apple soda
40ml prosecco

Pectolase, Apple Juice

Method:

Add 2% pectolase to Welsh Farmhouse apple juice and refrigerate for one hour. Spin in acentrifuge at 4000rpm for 15 minutes (or stain through a muslin cloth) to clarify. Carbonate at 40psi.

Golden Cider, Caster Sugar, Plain Flour, Almond Flour, Butter

Method:

Reduce golden cider on hob by 50% volume to create a cider reduction. Add 45g cider reduction, 85g caster sugar, 20g plain flour, 45g almond flour and 20g melted butter to a mixing bowl and mix by hand until fully combined (the almond flour won’t totally dissolve so it will be a slightly lumpy homogenous mass). Refrigerate for 1 hour. Spread thinly on a silicone baking mat (this quantity will fill one 42cmx29.5cm baking mat) and bake at 150 degrees for 8 minutes. The mixture should now be solid but soft. Cut into desired shape, and return to an oven for a further 15 minutes or until golden brown. Allow to cool, then store in an airtight container.
