Recipe

Cocktail Spec:


40ml Vivir Tequila
10ml Nardini Acqua di Cedro

2.5ml Blueberry & Lemon Balm Cordial
45g melted butter 
130g sugar 
90g egg whites 
60g flour 
2.5g lemon zest 
2.5g salt 
0.25g yellow colouring

Recipes:


Ascorbic Acid, Braeburn Apples, Fresh Sage, Ice, Pectolase, Malic Acid, Citric Acid

Method:


Add 150g blueberries and 150g water per 8g lemon balm leaves to a blender with 1% pectolase. Blend until smooth and leave for 20 minutes. Spin in centrifuge (or alternatively strain through a muslin cloth). Add sugar at 2:3 sugar:liquid, then add 1.5% malic acid and 2% citric acid. Stir until dissolved and bottle. 

Plain Flour, Water, Olive Oil, Salt, Dried Sage

Method:


Add all ingredients to bowl and mix until smooth. Spread into leaf moulds, and bake at 150 degrees for 8 minutes (or until firm enough to remove from moulds). Once cool enough, remove tuilles from moulds, place on silicone baking mats and bake for another 6 minutes (or until slightly golden and crispy). 

Method:


  1. Add all ingredients to boston tin and shake.
  2. Fine strain into chilled Nick & Nora.
